What’s for Dinner? Chicken Quesadillas!

Because everyone loves Mexican food! This will be the easiest, quickest, most delicious meal that you’ll make for your family. It’s only five ingredients and feeds plenty. It takes about 30 minutes to prep and cook. I’ll keep it short and sweet, just like this recipe. Let’s get into it!

What you’ll need:

  • fully cooked chicken fajita strips
  • tortilla wraps
  • diced tomatoes with green chiles
  • shredded queso quesadilla Cheese
  • taco seasoning (optional: not really needed, just gives it an extra flavor kick)
  • olive oil
  • 2 skillets

Disclaimer: This is for inspiration. I’m not a chef, I’m just a mom throwing together meals for her kiddos. I can’t tell you exactly how much of an ingredient to use because I never measure anything when I’m free styling a recipe. I’m an “eyeball” kinda gal. And I make the biggest messes when I cook. Don’t be like me. But still, this is gonna taste really good. Trust yourself and your “eyeball” game!

Don’t be afraid to add or take away (onions, green pepper, beef, no meat at all)!

Step 1: Dice the chicken up. You may cut it as small as you like (or don’t chop it at all, completely up to you).

Step 2: Open diced tomatoes and drain the juice.

Step 3: Line skillet with olive oil.

Step 4: Turn stove eye on medium and let skillet warm up.

Step 5: Add diced chicken and tomatoes in your first skillet, mix them, and allow them to heat up.

Step 6: Line your second skillet with olive oil and allow it to heat up.

Step 7: Add two quesadillas to second skillet, scoop your chicken/tomato mixture into the quesadillas, add cheese (to your liking), and fold the quesadillas.

Step 8: Allow quesadilla to cook in skillet until the cheese has melted, flipping quesadilla occasionally so that both sides can get a little crispy.

Step 9: Cut and serve!

My family and friends enjoy this dish. I like to pair it with yellow rice (Mahatma is my go to brand). I also like to use salsa and sour cream as dipping sauces. Guac would probably be good too!
